Everything (except the animal products) Holiday Stuffing
(Serves 8-10)
This is a twist on a recipe my mom makes that was a staple at Thanksgiving throughout my childhood. She makes it with French bread but almost any bread will work!
Ingredients:
1 pack everything bagels (cauliflower or gluten-free bread also works)
1 stick (1/2 cup) vegan butter melted
2 cups veggie sausage (I like anything that comes in bigger chunks, i.e; Litelife, Beyond Meat)
3 celery stalks diced
1 large apple diced (I like granny smith but any kind will work)
1 onion diced
1 cup pecans, toasted
1 cup cranberries
2 cups vegetable stock
1 Tbs. fresh sage chopped
1 Tbs. fresh thyme
1 Tbs. fresh rosemary chopped
Salt and pepper to taste
Directions
1. Preheat oven to 350 F.
2. Cut bagels into ½ inch cubes and let stale uncovered at room temperature overnight. Alternatively, dehydrate in your oven at its lowest setting(150 F-250 F) until firm. This usually takes 1-2 hours.
3. Saute celery, onion, sausage and apple in butter until slightly tender.
4. Add sage, rosemary, and thyme.
5. Salt and pepper to taste
6. Add sauteed mix to large bowl with the bagels, cranberries, and pecans, then slowly add vegetable stock until all is incorporated. Bread should be soft throughout. Add more stock if necessary
7. Pack fairly tightly into large oiled baking pan and cover with foil.
8. Bake at about 350 until heated through 20 to 30 mins. If you prefer a crispy top, remove the foil for the second half of cooking.
